A few metres from Plaza Bolívar, almost opposite the old side door of the cathedral (the "false door"), there is a tiny restaurant. Its entrance is easy to miss, but it would be a shame not to know this icon of traditional Santafereña cuisine. The restaurant has been in existence since 1816, and it is said to be the oldest in Colombia. It is famous for its traditional dishes, such as its famous tamal, to be enjoyed with hot chocolate, or its almojábana of yellow corn and fromage frais, to be served with an agua de panela. There are many sweets on display in the window, try for example the Guanábana brand. It should be noted that the same family has run the establishment since its inception and has kept the authentic recipes of its ancestors. The place is very small, uncomfortable when there are a lot of people, but here we dive into the heart of the pure Colombian tradition!
